Quick Tips

1/2 Kg Chicken Wings
2 - 3 Tbsps Chilly Sauce
1/2 cup All purpose flour (Maida)
2 Tbsps Tomato sauce/Ketchup
3 -4 Garlic cloves, finely chopped
2 - 3 Tbsps White vinegar
2 Tbsps freshly ground black pepper
3 Tbsps Kashmiri red chilly/Degi mirch powder
1 small packet of mixed Herbs
1 Tbsp, Butter
Oil for frying
Salt, to taste
Instead of frying the wings, choose a healthier option! Sprinkle some oil on the wings, and bake them on a tray, in a pre-heated oven at 200 deg. for 10-15 minutes until done.

​​Do not throw away those Dominos pizza mixed herbs packets! Use one of those here! I save them, (chuck them inside your freezer and they should last for at least a few months

​To make this a kids friendly recipe, reduce the amount of red chilly sauce and red chilly powder to 2 tbsps each. Also add a tbsp of good honey to make it sweet, sour, hot and tangy wings!
Use a sharp knife to cut the chicken wings at the bone. Save the tips for later (to make some chicken stock). Cut at the farthest end to get rid of the tip. You can keep the rest of the wing whole or cut it into drummets again at the bone joint. I prefer to keep them whole.

​Marinate the chicken with some salt, kashmiri red chilly powder, and the mixed herbs. Mix well.

​In a ziplock bag (or a simple clean plastic bag), add the flour, freshly ground pepper and some salt. For an extra kick and color, add a tablespoon of kashmiri red chilly powder to the flour. Mix well.

After about 30 mins of marination, add the chicken wings to the bag. Close the bag, and go crazy and toss it all around! (This helps the seasoned flour get into all the nook and crannies of the wings!)

Heat some oil in a deep frying pan. (see quick tips for a healthier option). Fry the chicken wings in batches until they are done. It should be around 6 - 8 minutes.

​Drain on a paper towel to remove the excess oil. 

​In another shallow fry pan, add the butter and let it melt.Add the chopped garlic, and fry it for a minute or two.Now add the chilly sauce and mix it well. Add the tomato sauce/ketchup and mix it well.At this point, add 1 table spoon of the red chilly powder. Add the vinegar and stir this sauce. Taste, and adjust for salt.

​At this point the sauce should start to thicken. Now is the time to add your fried/baked chicken wings and toss them around so that they get coated with this nice thick sauce!

Serve hot, with blue cheese dressing or ranch dressing!
