Quick Tips

6 Large potatoes
​6 Eggs
1 cup Green, Red and Yellow bell peppers, diced finely
1/2 cup Processed cheese, grated
1 Tsp Mixed Herbs
1 Tsp Freshly ground black pepper
1 Tbsp melted butter
Salt to taste
Oil as needed
Filling Ideas
Add diced sausages (chicken/turkey or any available) to your filling or some nice bacon bits! Would make a complete breakfast option!(when adding bacon, adjust salt, to the saltiness of the bacon)

​How about making a classic desi omlette and adding it as a stuffing in the baked potato? (onions, green chillies, salt, pepper, turmeric, coriander and a whole egg beaten well)

​To make the potato skin extra crispy, once baked, stick it under the grill for a couple of minutes (upside down after you have scooped off the flesh). OR just fry em up for extra crispyness skin side down! Then stuff the potatoes with stuffing and bake them in the oven once cooled.

​Baking potatoes in the microwave is a quick way, but yields potatoes with soft skin. If you don’t have a microwave handy, use a preheated oven at 200 deg. C to bake your potatoes for around 45-60 minutes. This will also give you that crispy skin!
Clean the potatoes under cold running water. Brush lightly to remove dirt and grit. Preheat the oven to 200 deg. C.

​Lightly oil the potatoes all over. Prick the potatoes all over with a fork (ensure you prick the skin and no more)

​Bake the potatoes in a microwave/oven. (For baking in oven, see quick tips). In the microwave, 5 - 8 minutes on high on each side, depending on the size of the potato). Insert a toothpick in the center to ensure the potatoes are cooked.

Take them out, place on a rack and let them cool. Make your filling while the potatoes are cooling. Cut the top off.

​With a spoon, scoop out the flesh. Ensure you have the enough flesh all around and do not break the skin!

​Lightly brush the insides all over with melted butter.Add grated cheese. Then add the cooled down filling. Ensure you don't overfill (you still need to add your egg in there!)

​Break one egg in each of the potatoes. Sprinkle salt and pepper on the top.

Bake the stuffed potatoes in the oven at 200 deg. C for 10 - 12 mins. If you like your eggs a bit on the runny side, reduce the time. 

Remove from the oven. Garnish with bell peppers and some more cheese! Put it under the grill for a minute or two before serving!

For the filling

​Add 1 tbps of butter to a pan on heat.Add the bell peppers, and saute for a couple of minutes. (Keep a small portion of the bell peppers aside for garnish).

​Add the mixed herbs and mix well. Add a pinch of black pepper. Taste and adjust for salt.Let the filling stand and cool.
